Famous Red Lobster Shrimp Scampi
Tangy, garlicky, and just the right amount of creamy and spicy — this Shrimp Scampi is my go-to recipe when I want to spoil myself or my family. The rich, flavorful broth is absolutely irresistible with crusty bread for dipping, but you can also serve it over pasta for a heartier dish.
Ingredients
- 1 lb medium shrimp, peeled and deveined
- 1 tablespoon pure olive oil
- 2 tablespoons garlic, finely chopped
- 1 1/2 cups white wine (Chardonnay works well)
- Juice of 1/2 fresh lemon
- 1 teaspoon Italian seasoning
- 1/2 cup softened butter
- 1 tablespoon chopped parsley
- 1/2 cup grated Parmesan cheese
- Salt and pepper to taste
Instructions
- Heat a cast iron skillet over medium heat and add olive oil.
- Add shrimp and cook until just pink and no longer translucent (about 2–3 minutes). Remove shrimp and set aside.
- Add garlic to the skillet and cook for 2–3 minutes, stirring frequently. Do not let garlic brown.
- Pour in white wine and lemon juice. Bring to a simmer and let reduce by half.
- Stir in Italian seasoning and reduce heat to low.
- Add softened butter to the skillet and stir until melted and incorporated. Avoid overheating to prevent separation.
- Return shrimp to the skillet and toss in the sauce until heated through.
- Garnish with parsley, salt, and pepper to taste. Sprinkle with grated Parmesan cheese before serving.
