Banana Nut Cake with Cream Cheese Frosting

This Banana Nut Cake combines sweet ripe bananas, rich cream cheese frosting, and a drizzle of caramel for an indulgent treat. Perfect for birthdays, potlucks, or whenever you need a crowd-pleasing dessert!

Ingredients

For the Cake:

  • 3 ripe bananas, mashed
  • 2 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup buttermilk
  • 1 cup chopped walnuts or pecans

For the Frosting:

  • 8 oz cream cheese, softened
  • 1/2 cup unsalted butter, softened
  • 3–4 cups powdered sugar, sifted
  • 1 teaspoon vanilla extract

For the Topping:

  • Sliced bananas
  • Whole pecans or walnuts
  • Caramel sauce, for drizzling

Instructions

Preheat and Prepare:

  1. Preheat oven to 350°F (175°C).
  2. Grease and flour two 8-inch round cake pans.

Make the Cake Batter:

  1. In a medium bowl, whisk together flour, baking powder, baking soda, and salt.
  2. In a large bowl, cream butter, granulated sugar, and brown sugar until light and fluffy.
  3. Add eggs one at a time, beating well after each addition. Stir in vanilla.
  4. Alternate adding flour mixture and buttermilk to the creamed mixture, starting and ending with flour.
  5. Fold in mashed bananas and chopped nuts.
  6. Divide batter evenly between prepared pans.

Bake the Cake:

  1. Bake for 25–30 minutes, or until a toothpick inserted in the center comes out clean.
  2. Cool in pans for 10 minutes, then transfer to wire racks to cool completely.

Prepare the Frosting:

  1. Beat cream cheese and butter together until smooth.
  2. Gradually add powdered sugar and vanilla; beat until smooth and creamy.

Assemble the Cake:

  1. Place one cake layer on a serving plate and spread frosting on top.
  2. Add the second layer and frost the top and sides of the cake.

Add Toppings:

  1. Arrange sliced bananas and whole nuts on top of the cake.
  2. Drizzle with caramel sauce just before serving.

Serving Tips

This cake is best enjoyed the day it is assembled to keep the bananas fresh. Refrigerate any leftovers in an airtight container.
