Chocolate Chip Cookie Dough Brownie Bites

Ingredients

For the Brownie Base:

  • 1/2 cup butter, melted
  • 1 cup sugar
  • 2 eggs
  • 1 tsp vanilla extract
  • 1/3 cup cocoa powder
  • 1/2 cup all-purpose flour
  • 1/4 tsp salt
  • 1/4 tsp baking powder

For the Cookie Dough Layer:

  • 1/2 cup butter, softened
  • 1/2 cup brown sugar
  • 1/4 cup sugar
  • 2 tbsp milk
  • 1 tsp vanilla extract
  • 1 cup all-purpose flour
  • 1/2 tsp salt
  • 1/2 cup mini chocolate chips

For the Chocolate Coating:

  • 1 cup dark chocolate chips
  • 1 tsp coconut oil or butter
  • Extra mini chocolate chips for garnish

Directions

  1. Preheat oven to 350°F (175°C). Grease or line a mini muffin tin.
  2. In a bowl, mix melted butter and sugar. Add eggs and vanilla; stir well.
  3. Sift in cocoa powder, flour, salt, and baking powder. Mix until just combined.
  4. Spoon brownie batter into muffin tins, filling each about 1/3 full. Bake for 10–12 minutes. Let cool completely.
  5. Meanwhile, in another bowl, cream together butter, brown sugar, and sugar. Mix in milk and vanilla.
  6. Add flour and salt; stir until smooth. Fold in mini chocolate chips.
  7. Form small scoops of cookie dough and gently press onto the cooled brownies. Freeze for 15–20 minutes.
  8. Melt chocolate chips with coconut oil or butter. Dip each brownie bite top into the chocolate, then garnish with extra mini chips.
  9. Refrigerate until chocolate sets. Serve and enjoy!

  • Try using white chocolate or peanut butter chips for a twist.
  • Use silicone molds for easier release.
