Ingredients
For the Meatloaf:
- 4 cups herb seasoned stuffing mix, divided
- 4 cups turkey stock, divided
- 6 tablespoons butter
- 1½ cups onion, finely diced
- 1 cup celery, finely diced
- 2 teaspoons garlic, minced
- 1 tablespoon Bell’s Seasoning (or poultry seasoning)
- 4 large eggs, beaten
- 2 pounds ground turkey (85% lean)
- 1½ teaspoons kosher salt
- ½ teaspoon black pepper
For the Gravy:
- 2 cups reserved turkey stock
- 3½ tablespoons butter
- 5 tablespoons all-purpose flour
- ½ teaspoon Kitchen Bouquet (optional)
- Salt and pepper, to taste
Instructions
- Preheat oven to 375°F (190°C). In a large bowl, mix 3 cups of stuffing mix with 2 cups of turkey stock. Let it soak for 10 minutes.
- In a skillet, melt butter over medium heat. Sauté onions, celery, and garlic until soft (about 5–7 minutes). Stir in Bell’s Seasoning and set aside to cool.
- Process the remaining 1 cup of stuffing mix in a food processor to form fine crumbs.
- Add ground turkey, beaten eggs, salt, pepper, sautéed vegetables, and processed crumbs to the soaked stuffing. Mix until just combined.
- Line a baking sheet with parchment paper and spray with nonstick spray. Shape mixture into a loaf using wet hands.
- Bake for 55–60 minutes, or until internal temperature reaches 155°F. Let rest for 15 minutes before slicing.
To Make the Gravy:
- Melt butter in a saucepan. Whisk in flour and cook for 2–3 minutes.
- Gradually add warm turkey stock, whisking constantly until smooth.
- Stir in Kitchen Bouquet if using. Season with salt and pepper to taste.
- Simmer until thickened, then serve over sliced meatloaf.
