Cinnamon Sugar Caramel Crackers

Ingredients
- 5 cups oyster crackers
- 1 cup unsalted butter
- 1 cup light brown sugar, packed
- 3 teaspoons ground cinnamon, divided
- 1 teaspoon vanilla extract
- 2 tablespoons granulated sugar
- 3/4 teaspoon kosher salt
Instructions
- Preheat oven to 350°F (175°C) and line a baking sheet with foil or parchment paper.
- Spread oyster crackers evenly over the baking sheet. Set aside.
- In a medium saucepan over medium heat, combine butter and brown sugar. Stir constantly until the mixture reaches a boil. Boil for 2 minutes, stirring continuously.
- Remove from heat and stir in 2 teaspoons of cinnamon and the vanilla extract.
- Pour the caramel mixture over the crackers and use a rubber spatula to stir and coat them evenly.
- Bake for 10 minutes or until bubbly and golden.
- While baking, mix together granulated sugar, remaining 1 teaspoon cinnamon, and kosher salt in a small bowl.
- Remove crackers from oven and immediately sprinkle with the cinnamon sugar mixture.
- Let cool completely. Break into pieces and enjoy!
