Tender beef stew meat simmers low and slow with bell peppers, garlic, tomatoes, and broth, all coated in a rich, savory gravy. The result? A flavorful family dinner that pairs perfectly with rice or mashed potatoes.

Ingredients

  • 16 oz beef stew meat
  • 2 bell peppers (any color), cut into strips
  • 1 tbsp vegetable oil
  • 3 tbsp Worcestershire sauce
  • 1 tsp minced garlic
  • 1 can beef broth
  • 1 can stewed tomatoes (with juice)
  • Seasoned salt, to taste
  • All-purpose flour (for coating meat and thickening)

Instructions

  1. Coat the Meat: In a large bowl, mix flour with seasoned salt. Dredge the beef stew meat until well coated.
  2. Brown: Heat vegetable oil in a skillet over medium heat. Add the coated beef, garlic, and bell peppers. Cook until the beef starts to brown.
  3. Transfer: Remove the beef and peppers from the skillet and place them into a lined slow cooker, leaving the grease behind.
  4. Make Gravy: In the same skillet, add stewed tomatoes (with juice) and beef broth. Gradually whisk in flour, stirring constantly, until the mixture thickens into a gravy.
  5. Slow Cook: Pour the gravy over the beef and peppers in the slow cooker. Cover and cook on low for 8 hours until the beef is tender.
  6. Serve: Enjoy your pepper steak over rice, mashed potatoes, or egg noodles.
