I like to serve this slow cooker potato and onion bake straight from the crock, spooned into shallow bowls so the buttery gloss coats every slice. It’s hearty enough to stand alone with a slice of crusty bread or a pan of cornbread for soaking up the buttery juices.

 Ingredients

  • 3 tablespoons salted butter, melted (plus extra for greasing)
  • 2 pounds russet or Yukon Gold potatoes, thinly sliced (about 1/8-inch thick)
  • 2 large yellow onions, thinly sliced (about 1/8–1/4-inch thick)

 Directions

  1. Prep Slow Cooker: Lightly grease the inside of a 4- to 6-quart slow cooker with butter.
  2. Prep Potatoes: Peel if desired or scrub well. Slice into thin rounds (about 1/8-inch thick).
  3. Prep Onions: Slice onions thinly (about 1/8–1/4-inch thick).
  4. Butter Bottom: Drizzle 1–2 teaspoons melted butter in the slow cooker.
  5. First Layer: Add a layer of potatoes, slightly overlapping, then add onions.
  6. Butter & Season: Drizzle melted butter and optionally add salt and pepper.
  7. Repeat Layers: Continue layering potatoes, onions, and butter until used.
  8. Cook: Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours.
  9. Rest: Let sit uncovered for 10 minutes before serving.
  10. Serve: Scoop through all layers and spoon buttery juices over the top.
