If you don’t eat white flour, you’ll love this one. This simple seeded bread is made with just three basic ingredients — no yeast, no sugar, no flour — and bakes up into a hearty, wholesome loaf that is perfect for breakfast or snacking.
Ingredients
- 280 g (2 cups) mixed seeds (sunflower, pumpkin, flax, sesame)
- 1 cup (250 ml) plain yogurt or kefir
- 1 teaspoon baking soda
- 1 teaspoon salt
Instructions
- Preheat the oven to 180°C (350°F) and lightly grease a loaf pan or oven-safe glass baking dish (a large jar-style dish works too).
- In a large bowl, combine the mixed seeds, salt, and baking soda.
- Pour in the yogurt and stir well until all the seeds are evenly coated.
- Transfer the mixture to the prepared pan and smooth the top.
- Bake for 50–60 minutes, until golden brown and firm to the touch.
- Let cool in the pan for 10 minutes, then turn out onto a wire rack and cool completely before slicing.
Slice, toast, and enjoy with butter, avocado, or your favorite spread — a delicious, naturally gluten-free bread you’ll make again and again.
