Creamy Taco Soup

This Creamy Taco Soup is pure comfort food with a Tex-Mex twist. Savory ground beef, tomatoes, and taco seasoning simmer in a rich, cheesy broth finished with cream cheese, heavy cream, and sharp cheddar. Serve it with your favorite taco toppings for a crowd-pleasing dinner.

Ingredients

  • 2 lb ground beef
  • 1 small onion, diced
  • 1 bell pepper, diced (any color)
  • 2 garlic cloves, minced
  • 24 oz beef broth
  • 28 oz can petite diced tomatoes (crushed tomatoes work too)
  • 4 oz salsa
  • 2 taco seasoning packets
  • 4 oz cream cheese, softened
  • 1 cup heavy cream
  • 2 cups shredded sharp cheddar

Instructions

  1. Sauté the ground beef, onion, and bell pepper over medium heat until the meat is cooked through.
  2. Add the garlic, beef broth, tomatoes, salsa, and taco seasoning. Simmer on low-medium for about 20 minutes.
  3. Slowly add the softened cream cheese, heavy cream, and cheddar cheese. Stir until the cheeses melt and the soup is blended, then continue to simmer for another 15–20 minutes, stirring occasionally.
  4. Serve and garnish with your favorite taco toppings: more shredded cheese, sour cream, minced scallions, fried tortilla strips, or minced cilantro.

Tip: Whenever possible, use freshly grated cheese! Pre-grated packaged cheese is coated with cellulose that keeps it from melting smoothly.
