Wonton Soup

Homemade Wonton Soup from scratch is easier than you think — and so worth it. A rich, ginger-scented chicken stock, hand-folded pork wontons, and a light, savory broth make this a truly comforting classic.

Ingredients

For the stock

  • 4 lb chicken leftovers (mostly bones)
  • 1 tbsp ginger
  • 1 cup onions
  • 3 garlic cloves
  • ½ cup diced carrots
  • 1½ tsp salt
  • ½ tsp pepper
  • Juice of 1 lemon
  • ½ tsp coriander powder
  • ¼ tsp cayenne pepper
  • 3 pints cold water

For the wontons

  • ½ lb lean ground pork
  • 1 egg
  • ¼ cup water chestnuts, finely chopped
  • 1 tsp coriander powder
  • 2 green onions, finely chopped
  • 1 clove garlic, minced
  • 1 tbsp soy sauce
  • Pepper
  • 1 box (1 lb) wonton wrappers, thawed

Instructions

  1. Make the stock: Combine the chicken leftovers, ginger, onions, garlic, carrots, salt, pepper, lemon juice, coriander powder, cayenne pepper, and cold water in a large pot. Bring to a boil over high heat, then immediately reduce the heat to medium-low. Cover and simmer for 2 hours 30 minutes. Strain and discard the solids.
  2. Make the wonton filling: Mix the ground pork, egg, water chestnuts, coriander powder, green onions, garlic, soy sauce, and pepper.
  3. Place about 1 teaspoon of the filling on each moistened wonton wrapper and fold it up into a little pocket to seal.
  4. Cook 16 wontons in boiling water for 5 minutes.
  5. Transfer the wontons to the boiling stock and cook for another 5 minutes. Enjoy!
