Doritos Chicken Casserole Recipe

Level up your Taco Tuesday with this creamy, cheesy, crunchy Doritos Chicken Casserole! Packed with seasoned chicken, beans, corn, and layers of nacho cheese Doritos, this crowd-pleasing dish is as fun as it is flavorful. The whole family will love it—and yes, the kids will ask for seconds!

Ingredients

  • 1 (14.5 oz) package nacho cheese Doritos chips, lightly crushed
  • 2 1/2 cups cooked chicken, shredded
  • 1 (13.25 oz) can black beans, rinsed and drained
  • 1 (13.25 oz) can whole corn kernels, rinsed and drained
  • 1 1/2 cups Mexican blend cheese, divided
  • 1 (10 oz) can diced tomatoes with green chiles
  • 1 (4 oz) can diced green chiles
  • 1 (10.75 oz) can condensed cream of chicken soup
  • 1 (8 oz) container sour cream
  • 1 tablespoon taco seasoning

Instructions

  1. Preheat oven to 350°F (175°C) and lightly grease a 9×13-inch baking dish with non-stick spray.
  2. In a large bowl, mix together shredded chicken, black beans, corn, 1 cup of cheese, diced tomatoes with green chiles, cream of chicken soup, sour cream, and taco seasoning until well combined.
  3. Spread half of the crushed Doritos in the bottom of the baking dish.
  4. Pour the chicken mixture over the chips and spread evenly.
  5. Bake for 20 minutes.
  6. Remove from the oven, sprinkle with remaining Doritos and 1/2 cup cheese.
  7. Return to oven and bake for another 5–7 minutes, or until cheese is melted and bubbly.
  8. Serve hot. Garnish with fresh cilantro if desired.

  • Easy prep: Use leftover rotisserie chicken for quick assembly.
