Ingredients

For the Meatloaf:

  • 4 cups herb seasoned stuffing mix, divided
  • 4 cups turkey stock, divided
  • 6 tablespoons butter
  • 1½ cups onion, finely diced
  • 1 cup celery, finely diced
  • 2 teaspoons garlic, minced
  • 1 tablespoon Bell’s Seasoning (or poultry seasoning)
  • 4 large eggs, beaten
  • 2 pounds ground turkey (85% lean)
  • 1½ teaspoons kosher salt
  • ½ teaspoon black pepper

For the Gravy:

  • 2 cups reserved turkey stock
  • 3½ tablespoons butter
  • 5 tablespoons all-purpose flour
  • ½ teaspoon Kitchen Bouquet (optional)
  • Salt and pepper, to taste

Instructions

  1. Preheat oven to 375°F (190°C). In a large bowl, mix 3 cups of stuffing mix with 2 cups of turkey stock. Let it soak for 10 minutes.
  2. In a skillet, melt butter over medium heat. Sauté onions, celery, and garlic until soft (about 5–7 minutes). Stir in Bell’s Seasoning and set aside to cool.
  3. Process the remaining 1 cup of stuffing mix in a food processor to form fine crumbs.
  4. Add ground turkey, beaten eggs, salt, pepper, sautéed vegetables, and processed crumbs to the soaked stuffing. Mix until just combined.
  5. Line a baking sheet with parchment paper and spray with nonstick spray. Shape mixture into a loaf using wet hands.
  6. Bake for 55–60 minutes, or until internal temperature reaches 155°F. Let rest for 15 minutes before slicing.

To Make the Gravy:

  1. Melt butter in a saucepan. Whisk in flour and cook for 2–3 minutes.
  2. Gradually add warm turkey stock, whisking constantly until smooth.
  3. Stir in Kitchen Bouquet if using. Season with salt and pepper to taste.
  4. Simmer until thickened, then serve over sliced meatloaf.
