Classic Tomato Sandwich

Simple, nostalgic, and irresistibly delicious—this tomato sandwich shines brightest in peak tomato season.

Ingredients

  • 2 slices dense wholegrain bread with lots of seeds
  • 1 medium ripe beefsteak tomato
  • 1 1/2 teaspoons mayonnaise (adjust to taste)
  • 1 pinch kosher salt
  • Freshly ground black pepper

Instructions

  1. Toast bread to your preference. Let cool slightly.
  2. Core and slice tomato into thin slices, about 1/8-inch thick.
  3. Spread mayonnaise over one side of each toast slice.
  4. Layer tomato slices on one slice of toast.
  5. Sprinkle generously with salt and black pepper.
  6. Top with the second slice of toast, mayo-side down.
  7. Cut in half—diagonally or vertically—and serve immediately.
Tip: For extra flavor, add a sprinkle of flaky sea salt or fresh basil leaves.
Best enjoyed in late summer when tomatoes are at their juiciest. Don’t forget the napkins!
