Low-Carb Big Mac Rice Paper Rolls

Craving a Big Mac without the bun? These baked rice paper rolls capture all the flavors—beef, cheese, lettuce, and pickles—in a crispy, low-carb wrap.

Ingredients

  • 8 rice paper wraps
  • 1 lb ground beef
  • 1 small onion, finely chopped
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper, to taste
  • 8 slices low-fat cheddar cheese
  • 1 cup shredded lettuce
  • 1/2 cup sliced pickles
  • Sesame seeds (optional), for garnish

Instructions

  1. Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. Cook ground beef and onion in a skillet until browned. Season with garlic powder, onion powder, salt, and pepper. Drain fat and cool slightly.
  3. Prepare a shallow dish with warm water. Submerge one rice paper wrap until pliable.
  4. Place softened wrap on a towel or cutting board. Add cheese, beef mixture, lettuce, and pickles.
  5. Fold sides inward, then roll tightly. Place seam-side down on prepared baking sheet. Repeat with remaining wraps.
  6. Sprinkle with sesame seeds, if using.
  7. Bake 20–25 minutes, until golden brown and crisp.
  8. Cool a few minutes, then serve with your favorite dipping sauce.
Tip: For a “special sauce” vibe, mix light mayonnaise, sugar-free ketchup, mustard, and diced pickles as a dipping sauce.
These rolls are best enjoyed warm, straight from the oven. Store leftovers in the fridge and reheat in the oven for crispiness.
