Low-Carb Big Mac Rice Paper Rolls
Craving a Big Mac without the bun? These baked rice paper rolls capture all the flavors—beef, cheese, lettuce, and pickles—in a crispy, low-carb wrap.
Ingredients
- 8 rice paper wraps
- 1 lb ground beef
- 1 small onion, finely chopped
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper, to taste
- 8 slices low-fat cheddar cheese
- 1 cup shredded lettuce
- 1/2 cup sliced pickles
- Sesame seeds (optional), for garnish
Instructions
- Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
- Cook ground beef and onion in a skillet until browned. Season with garlic powder, onion powder, salt, and pepper. Drain fat and cool slightly.
- Prepare a shallow dish with warm water. Submerge one rice paper wrap until pliable.
- Place softened wrap on a towel or cutting board. Add cheese, beef mixture, lettuce, and pickles.
- Fold sides inward, then roll tightly. Place seam-side down on prepared baking sheet. Repeat with remaining wraps.
- Sprinkle with sesame seeds, if using.
- Bake 20–25 minutes, until golden brown and crisp.
- Cool a few minutes, then serve with your favorite dipping sauce.
Tip: For a “special sauce” vibe, mix light mayonnaise, sugar-free ketchup, mustard, and diced pickles as a dipping sauce.
