Buttery Pecan Snowball Cookies

Ingredients

  • 2 ¼ cups all-purpose flour
  • ½ cup powdered sugar
  • Pinch of salt
  • 2 sticks butter, at room temperature
  • 2 teaspoons vanilla extract
  • 1 cup pecans, finely chopped
  • 1 cup powdered sugar (for rolling)

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a large mixing bowl, cream together the butter and ½ cup powdered sugar until smooth.
  3. Mix in flour, salt, vanilla extract, and chopped pecans until a dough forms.
  4. Roll dough into 36 small balls and place on a parchment-lined or greased baking sheet.
  5. Bake for 12 minutes. Remove from oven and let cool completely.
  6. Roll cooled cookies in the remaining 1 cup of powdered sugar until fully coated.

Pro Tip: For extra snowy cookies, roll them a second time in powdered sugar once they’ve cooled completely.
