Baked Apple Fritters

These baked apple fritters are light, fluffy, and packed with Honeycrisp apple chunks, warm spices, and finished with a sweet vanilla glaze. No frying needed!

Ingredients

  • 1 1/2 cups all-purpose flour, sifted
  • 1/2 cup packed light brown sugar
  • 2 teaspoons baking powder
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground nutmeg
  • 1 pinch salt
  • 6 tablespoons cold unsalted butter
  • 1/2 cup whole milk
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup chopped Honeycrisp apple
  • 1 cup confectioners’ sugar
  • 2 tablespoons whole milk
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat Oven: Heat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Mix Dry Ingredients: In a large bowl, whisk together flour, brown sugar, baking powder, cinnamon, nutmeg, and salt. Cut in butter with a pastry blender (or fork) until mixture resembles coarse crumbs.
  3. Mix Wet Ingredients: In a small bowl or cup, whisk together milk, egg, and vanilla extract. Stir into flour mixture just until combined. Fold in chopped apples.
  4. Shape Fritters: Drop 1/4-cup scoops of batter onto the prepared baking sheet.
  5. Bake: Bake 11–12 minutes, or until a skewer inserted in the center comes out clean. Transfer to a wire rack.
  6. Glaze & Broil: Preheat broiler. In a small bowl, whisk together confectioners’ sugar, milk, and vanilla until smooth. Brush fritters with glaze and broil for about 2 minutes, until glaze is bubbly.
  7. Cool & Serve: Let fritters cool slightly before serving. Enjoy warm!
Pro Tip: These fritters taste best the same day, but you can store leftovers in an airtight container for up to 2 days.
