Mashed Potato Muffins

Fluffy inside with a crispy golden top, these savory Mashed Potato Muffins are the perfect way to reinvent leftover mashed potatoes. Loaded with cheddar cheese, sour cream, green onions, and optional bacon, they make a delicious side dish or snack!

Ingredients

  • 4 cups mashed potatoes (leftover or freshly made)
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 2 large eggs, lightly beaten
  • 1/4 cup chopped green onions
  • 1/4 cup crumbled cooked bacon (optional)
  • Salt and pepper, to taste

Instructions

  1. Preheat oven: Set oven to 375°F (190°C) and generously spray a muffin tin with cooking spray.
  2. Mix ingredients: In a large bowl, combine mashed potatoes, cheddar cheese, sour cream, eggs, green onions, and bacon (if using). Season with salt and pepper. Stir until well combined.
  3. Fill muffin tin: Spoon mixture into prepared muffin tin, filling each cup to the top.
  4. Bake: Place in oven and bake for 20–25 minutes, until golden brown and set.
  5. Cool & serve: Let muffins cool slightly in the tin before removing with a knife or spatula. Serve warm and enjoy!
