
Warm, golden, and kissed with cinnamon, these homemade Cinnamon Waffles are a weekend-morning dream. The batter mixes up in minutes, and a little trick with the eggs makes them extra fluffy.
Ingredients
- 2½ cups all-purpose flour
- ¼ cup sugar
- ¼ cup cinnamon
- 1 tbsp baking powder
- ½ tbsp salt
- 2 eggs
- 1½ cups buttermilk (or 2 cups milk)
- ¼ cup vegetable or canola oil (or melted, cooled butter)
- 2 tsp vanilla extract
Instructions
- Mix the dry ingredients thoroughly.
- Beat the wet ingredients thoroughly.
- Add the dry ingredients slowly to the wet ingredients and mix until smooth. The batter should be thick.
- For fluffier waffles: Separate the eggs and use the yolks in the wet ingredients. Beat the egg whites into stiff peaks. Combine the wet and dry ingredients first, then gently fold the stiff egg whites into the waffle batter. Do not overmix.
- Cook in a waffle iron according to the manufacturer’s instructions.
Serve warm with maple syrup and a dusting of cinnamon — pure breakfast bliss!
