Easy Corned Beef Soup with cabbage, potatoes and carrots

Hearty, humble, and full of flavor — this Easy Corned Beef Soup turns simple cabbage, potatoes, and tender corned beef into a bowl of pure comfort. A one-pot meal that warms you from the inside out.

Ingredients

  • 4 cups cabbage, sliced thick
  • 2 cups potatoes, cubed
  • 1 cup carrots, sliced thinly
  • 1/2 onion, diced
  • 3 cups cooked corned beef, cubed
  • 5 cups beef broth

Instructions

  1. In a 5-quart pan or Dutch oven, sauté the onion and carrots until they start to soften, about 5 minutes.
  2. Add the cabbage, potatoes, and corned beef. Pour in enough beef broth to cover by about 1 inch.
  3. Cover and cook on low until the potatoes soften, about 20 minutes. Serve hot.

Simple ingredients, big comfort — don’t forget the crusty bread for soaking up the broth.
