Ingredients
- 1 pie crust, baked and cooled
- 1/4 cup butter
- 1 cup sugar
- 1/4 cup all-purpose flour
- 1/2 cup cocoa powder
- 2 cups milk
- 3 egg yolks
- 1 tsp vanilla extract
- 3 egg whites (meringue)
- 1/4 tsp cream of tartar (meringue)
- 1/2 cup sugar (meringue)
Instructions
- Bake the pie crust according to package directions; cool completely.
- In a saucepan, whisk together the cocoa, sugar, and flour. Slowly whisk in the milk, then add the egg yolks and butter.
- Cook over medium heat, stirring constantly, until thick and pudding-like, 10–12 minutes. Remove from the heat and stir in the vanilla.
- Pour the warm filling into the cooled crust.
- Beat the egg whites with the cream of tartar to soft peaks. Gradually add the sugar and beat to stiff, glossy peaks.
- Spoon the meringue over the filling, sealing it to the edges, and make decorative peaks.
- Bake at 350°F for 10–15 minutes, until golden. Cool completely before serving.
