Golumpki Soup — hearty cabbage roll soup with ground beef and rice

All the cozy flavors of stuffed cabbage rolls, without any of the rolling. This Golumpki Soup simmers ground beef, cabbage, tomatoes, and rice in a savory broth — hearty, comforting, and perfect for chilly evenings.

Ingredients

  • 1 lb ground beef (or ground pork)
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 4 cups green cabbage, chopped
  • 1 (14.5 oz) can diced tomatoes
  • 1 (15 oz) can tomato sauce
  • 4 cups beef broth
  • 1/2 cup uncooked white long-grain rice
  • 1 tsp Worcestershire sauce
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp paprika
  • 1/2 tsp dried thyme
  • 1 tbsp brown sugar (optional)
  • 1 tbsp apple cider vinegar

Instructions

  1. Brown the beef and onion in a large Dutch oven over medium-high heat. Drain the grease and stir in the garlic; cook 1 minute.
  2. Add the cabbage, diced tomatoes, tomato sauce, beef broth, Worcestershire sauce, salt, pepper, paprika, thyme, brown sugar, and vinegar. Bring to a boil.
  3. Reduce the heat to low, cover, and simmer for 20 minutes.
  4. Stir in the uncooked rice and simmer 15 minutes more, stirring occasionally, until the rice is tender. Serve hot.

A one-pot wonder that tastes even better the next day — make a big batch and enjoy the leftovers.
