Big Mac Cheeseburger Protein Bowls with beef, pickles and Mac sauce

All the flavors of your favorite fast-food burger, lightened up and packed with protein. This Big Mac Cheeseburger Protein Bowl layers seasoned beef, crisp lettuce, pickles, and cheddar with a creamy Greek-yogurt “Mac” sauce — meal-prep friendly and seriously satisfying.

Ingredients

  • 1 lb extra-lean ground beef (93% or 96% lean)
  • 4 cups shredded romaine lettuce
  • 1 cup cherry tomatoes, halved
  • 1/2 cup red onion, finely diced
  • 1/2 cup dill pickle chips
  • 1/2 cup reduced-fat shredded sharp cheddar
  • Salt, pepper, and garlic powder, to taste
  • 1/2 cup non-fat Greek yogurt (Mac sauce)
  • 2 tbsp sugar-free ketchup (Mac sauce)
  • 1 tbsp yellow mustard (Mac sauce)
  • 1 tbsp pickle juice (Mac sauce)
  • 1/2 tsp smoked paprika (Mac sauce)
  • 1/2 tsp onion powder (Mac sauce)
  • Optional: sesame seeds, fresh chives or green onions

Instructions

  1. Brown the beef in a large skillet over medium-high heat. Season with salt, pepper, and garlic powder; drain the fat and cool slightly.
  2. Whisk all the sauce ingredients until smooth.
  3. Divide the lettuce among four meal-prep containers.
  4. Top with the onion, tomatoes, and pickles, then the beef and cheddar.
  5. Drizzle with the Mac sauce and sprinkle with sesame seeds and chives.
  6. Refrigerate up to 4 days — keep the sauce separate if you plan to reheat the beef.
