Chicken Spinach and Mushroom Low Carb Oven Dish

Ingredients

  • 1 small bag fresh baby spinach
  • 1 dash pepper
  • 1 dash herb and garlic seasoning
  • 8 oz shredded mozzarella cheese
  • 6 thinly sliced chicken breasts
  • 1 container green onion cream cheese
  • 1/4 cup olive oil
  • 1/2 cup chicken broth

Instructions

1. Preheat the Oven

Preheat your oven to 375°F (190°C).

2. Prepare the Chicken

  1. In a large baking dish, arrange the chicken breasts in a single layer.
  2. Drizzle with olive oil and season with pepper and herb and garlic seasoning.

3. Add Cream Cheese Mixture

  1. In a small bowl, mix the green onion cream cheese with chicken broth until smooth.
  2. Spread the mixture evenly over the chicken breasts.

4. Add Spinach and Cheese

  1. Layer the fresh baby spinach on top of the cream cheese mixture.
  2. Sprinkle mozzarella cheese evenly over the spinach.

5. Bake

  1. Cover the dish with foil and bake for 25–30 minutes until the chicken is fully cooked and cheese is melted.
  2. Remove foil in the last 5 minutes of baking for a golden, bubbly finish.

6. Serve
